The 'Accident' of sourdough
The first raised or leavened bread seems to have been accidental - when airborne wild yeasts found their way into plain wheat dough, expanding it and giving a lighter-textured bread. The Egyptians kept this process going by using a piece of uncooked dough from one batch to start another. Spread by the Romans, this technique led to what is today called sourdough.
